Walnut Non Meatballs By Grace

Walnut Preparation:
Take 1 cup of dry walnuts and put in a wide mouthed jar
I use a salsa jar. Fill the jar with cool water and screw the lid on and let sit for 5 hours. Drain in a strainer for a few minutes and you can then store them in the Fridge for up to 5 days. This will give you about 1 1/4cups.

I put 1 cup of walnuts in a food processor (use the S blade) and make a pate out of them and form them into balls to serve them with spaghetti squash. We have eaten them plain but you can jazz them up by adding ¼ tsp of curry and garlic powder with 1tsp of lemon juice, virgin olive oil and minced Onions


For a sauce over the spaghetti squash
I throw 1 ripe tomato, small bell pepper.

1/2 cup sun dried tomatoes and 1Clove of garlic in my food processor with the s blade and process it until the ingredients are smooth.

Add about 1 tsp of dried oregano, and tsp dried basil and salt to taste. If you like spicy then add curry powder or cayenne to it.

To cook Spaghetti Squash:
Cut Spaghetti Squash in half. Scrape out seeds. 
Fill baking dish up 1/2 way with water. Place fleshy side down in a baking pan. 
I like to use my glass cake pans. One is usually big enough for one Spaghetti Squash.
Bake at 350 until you can poke a knife through the Squash easily. About 40 minutes.
Drain water and scrape Squash out of shell with a fork. Place on plate and pour walnut balls and sauce over Spaghetti Squash.
